To print this recipe, choose a print size:
1 bunch Broccolini (about 8 stalks)
8 oz. sliced prosciutto, ham or turkey (8 pieces)
4 tbsp. fat-free garlic herb cream cheese, or other favorite
Rinse Broccolini and trim 1/4 inch off of the ends. Blanch for 2 minutes in boiling water. Immediately drain and submerge in a bowl of ice water to stop the cooking process. Drain and pat dry with paper towel. Spread each slice of meat with 1/2 tbsp. of the cream cheese. Then roll the meat around the blanched stalk of Broccolini. When finished, store the wraps in a large, airtight container in your refrigerator. Chill 30 minutes before serving. Can be made up to 48 hours in advance.
