Black bean brownies

Full of protein and fiber, and low in fat, beans can give baked goods a nutritional boost without compromising their flavor. Black beans work especially well in chocolate recipes, such as these brownies.

1/2 cup unsalted butter
2 oz. unsweetened chocolate
1/3 cup all-purpose flour
Pinch of salt
1 cup cooked black beans, dried
2 large eggs
3/4 cup granulated sugar
1 tsp. pure vanilla extract
2/3 cup chocolate chips


Preheat oven to 350 degrees. In a small saucepan over low heat, melt butter and unsweetened chocolate, making sure not to burn them. Mix until combined. Remove from heat. In a medium bowl, combine flour and salt. In the bowl of a food processor, add black beans and cooled butter/chocolate mixture. Process until smooth. Add eggs, sugar and vanilla. Process again until combined. Add mixture to flour and fold in gently, leaving flour still visible. Add chocolate chips and fold to combine. Pour batter into a lightly greased, 8-inch square pan. Bake for 28 to 30 minutes. Cool completely before eating.
