Fingerling potatoes with smoked salmon and cream of chives

  • 9-10 fingerling potatoes
  • Few pats of butter
  • 6 smoked salmon slices
  • For Cream of Chives
  • 4 oz. Heavy Cream
  • Small bunch of chopped chives
  • One lemon
  • Dash of salt


Place fingerling potatoes in cold water in a saucepan and bring to a boil. Cook for around 20 minutes (until potatoes are done). Peel potatoes and while they are still warm, dice up onto plate. Add a few pats of butter to top of potatoes. Put thin slices of salmon over potatoes and then spoon cream of chives dressing around potatoes and salmon. Add a few twigs of dill on top and squeeze a little bit of lemon juice over salmon.
