Curried turkey salad with apples and walnuts

  • 2/3 cup mayonnaise
    2 1/2 tsp. curry powder, toasted (*see note)
    1/4 tsp. fresh lemon juice
    Pinch of cayenne pepper
    2 cups cubed roasted turkey
    1 cup peeled, cored and diced red apple
    1 celery stalk, diced
    1/2 cup peeled, seeded and diced cucumber
    1/4 cup chopped, toasted walnuts
    Salt and pepper, to taste
    6 pita pockets
    Tomato slices for garnish
    Alfalfa or radish sprouts for garnish
  • *Note: Toast the curry powder in a small nonstick skillet over low heat, stirring often, for 1 minute, or until just fragrant. This will help remove the raw flavor.


Combine the mayonnaise, curry powder, lemon juice and cayenne pepper in a bowl; stir to blend. Combine the turkey, apple, celery, cucumber and walnuts in a bowl. Fold in the dressing. Season with salt and pepper.

Cut the pita bread in half. Spoon the salad into the halves and garnish with sprouts and tomato slices.
