Wheat farmer's salad
Ingredients
Salad
1/2 cup hard wheat berries (see note)
1 1/2 cups water, or more if necessary to cover to an inch above the berries
1 to 1 1/2 scallions, chopped
1 stalk celery, diced
1/2 apple, diced
1/4 cup raisins or dried cranberries
1/4 cup chopped walnuts or any nuts
1/8 cup chopped dried pineapple
1 tbsp. diced red onion
Dressing
1/8 cup olive oil
1/8 cup apple or orange juice
1 tbsp. rice vinegar
1 tbsp. maple syrup
1/2 tsp. sea salt
1/4 tsp. cracked black pepper
Directions
Place wheat berries in a pot and cover with water by little more than an inch. Bring to a boil. Reduce heat and cover, simmering 50 to 60 minutes or until berries are tender. Add more water if needed. Meanwhile, in a small bowl, make dressing by combining oil, juice, rice vinegar, maple syrup, salt and pepper. Set aside.
When wheat berries are cooked, drain excess water and place in a large bowl. Add half of the dressing ingredients with the berries and stir. Let sit until wheat berries have cooled to room temperature. Stir in the remaining dressing and the remaining salad ingredients and toss gently. Serve chilled.
Note: Wheat berries (whole, unprocessed kernels) are sold in natural food stores and many supermarkets.
