Ingredients

4-6 parsnips
2 tbsp. olive oil
Salt and pepper to taste

Directions

Peel parsnips, cut into 3 ½-inch squares and toss with a little olive oil, salt and pepper. Place on a cookie sheet and roast at 400 degrees for approximately 20-30 minutes, stirring them on the cookie sheet occasionally. They'll soften and sweeten nicely and will pair up beautifully with just about any main dish.

Serves 4-6.
