Pomegranate vinaigrette

Ingredients
1 large pomegranate
1/4 cup lemon juice
1 clove garlic
3/4 tsp. ground cumin
1/2 tsp. pepper
1/4 tsp. ground coriander
1/4 tsp. salt
1/2 cup olive oil
Directions
Cut pomegranate into quarters and gently squeeze out the seeds and juice into bowl, peeling away skin layers if necessary. Strain to separate seeds from juice; reserve seeds and juice. Whisk lemon juice, garlic, cumin, pepper, coriander and salt into juice and then gradually whisk olive oil in. Use seeds to sprinkle over the salad for garnish.
Simply drizzle this over a green salad, add California feta cheese, garnish with pomegranate seeds, and enjoy!
