Granola and yogurt parfait
Auntie Em's serves this parfait with yogurt, but it's also great with milk.
Granola and yogurt parfait

Ingredients

Granola
3 cups old-fashioned oats
1 cup slivered almonds
1 1/3 cups sweetened, shredded coconut
6 tbsp. plus 1 1/2 tsp. honey
1/2 cup plus 2 tbsp. vegetable oil
1/4 tsp. almond extract
3/4 tsp. vanilla extract
 
Parfait
2 cups good-quality plain yogurt 
2 cups mixed in-season berries, such as raspberries, blueberries and sliced strawberries 

Directions

For granola: Preheat oven to 350 degrees.

Lightly coat a baking sheet with nonstick cooking spray or butter. In a medium bowl, combine oats, almonds and coconut. Set aside.

In a small bowl, whisk together honey, oil and extracts. Pour honey mixture into dry ingredients, mix well and distribute mixture evenly on baking sheet. Bake until all ingredients are a deep golden brown, stirring every 5 minutes to ensure even baking, about 20 minutes total. Watch carefully the last few minutes to avoid burning the granola. Cool completely on baking sheet.

To assemble: Place 1 cup granola and 1/2 cup yogurt in 4 parfait glasses or serving bowls. Top each with 1/2 cup berries. Serve immediately. (Store any leftover granola in a tightly sealed container.)
