California caviar

This popular recipe is from the California Dry Bean Advisory Board

Ingredients

1 1/4 cups dry blackeyes (8 oz.)
3 cups water
1 cup diced green bell pepper (1 medium)
3/4 cup diced onion (1 small)
1/4 cup finely chopped green onion
1/4 cup diced red bell pepper
1/4 cup finely chopped and seeded jalapeño chiles
3/4 cup low-calorie Italian salad dressing

Directions

Place beans in a large pot with 3 cups water; bring to a boil, reduce heat and simmer 45 to 50 minutes or until beans are just barely tender. Drain and rinse with cold water. Mix beans with remaining ingredients. Chill. Serve over lettuce or as a dip with tortilla chips.
