Butternut squash salad
Enjoy this simply decadent side dish all year 'round!
Butternut squash salad

Ingredients

2 cups butternut squash cubes
Olive oil, to taste
Salt and pepper, to taste
1 cup brown rice (I also like a blend of wild and brown rice)
1 cup crumbled feta cheese

Directions

Preheat oven to 400 degrees. Spread cubed squash on a baking sheet, drizzle with olive oil and season lightly with salt and pepper. Bake for 25 to 30 minutes or until tender and lightly browned, stirring halfway through baking to ensure even cooking. Meanwhile, cook rice. To serve, gently toss squash, rice and feta cheese.
