Brussels sprouts with bacon and onion

Ingredients
3 cups of fresh brussels sprouts
2 slices of bacon (diced)
3/4 cup white onion (finely diced)
1 clove of garlic (minced)
Salt and pepper to taste
Directions
In a heated pan, add bacon to render the fat. Remove stems from washed brussels sprouts and slice in half. Combine the sprouts and bacon. Dice onion and mince the garlic, adding a pinch of salt to the garlic, which helps to break it down and absorb the extra moisture. Then add the bacon/sprout mixture. Let simmer for 20 minutes, adding water or chicken stock when you see it's getting dry. Season to taste with salt and pepper and serve.
Serves 4.
