Bell pepper eggs-in-a-hole

Ingredients
1 red or yellow bell pepper
1 tbsp. olive oil
4 to 5 large eggs
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (or other favorite cheese)
Directions
Cut peppers into 1/2-inch rings and remove seeds and centers. In a large, nonstick skillet, heat olive oil over medium-high heat. Place sliced peppers in pan and sauté for a minute. Crack 1 egg into the center of each bell pepper ring. (Tip: Pouring the egg in slowly helps keep it from leaking and forms a nice seal. However, some egg will leak no matter what. Don't worry. It will still taste great!) Season with salt and pepper. Sauté for 3 minutes, then flip eggs over carefully. Top with Parmesan cheese.
