Baked sweet potato fries

Ingredients
5 sweet potatoes
Olive oil
Sea salt
Freshly ground black pepper
Garlic powder
Paprika
Directions
Preheat oven to 375 degrees. Peel potatoes and slice them into long strips about 1/4 inch wide. Use a crinkle knife if you have one. Brush a jelly-roll pan lightly with olive oil. Place sliced potatoes in the pan and toss them gently until they are lightly covered with oil. Spread potatoes out in the pan so they are a single layer. Lightly sprinkle with salt, pepper, garlic powder and paprika. Bake until potatoes are tender and golden brown, turning occasionally, about 20 minutes. Cool slightly before serving.
Note: If your strips are larger than 1/4 inch, you may need to cook the potatoes a few minutes longer.
