2-minute grilled okra

If you have only had okra in gumbo, it may surprise you that this fun vegetable can be grilled in just a few minutes. Have fun experimenting with your favorite seasonings!
Ingredients
Fresh okra (see tips)
Your favorite seasoning (such as taco, Cajun or mesquite)
Fresh lime or lemon wedges
Directions
Rinse okra, cut off the tops and slice in half lengthwise. Grill in a very hot panini maker or indoor grill for about 2 minutes until golden. Sprinkle with your favorite seasoning and citrus juice and enjoy!

- When buying okra, be sure it includes the tops. When the tops are broken off during harvest, okra can dry out quickly, and the result may be tough and stringy.
- By slicing the okra in half lengthwise right before grilling, you can avoid issues with the okra developing a slimy consistency.
