West Coast grilled pizza burger

Laurie Figone's love for grilled pizza and burgers is what inspired this creation. It's the best of both worlds.

West Coast grilled pizza burger

Ingredients

Pizza dough

2 1/2 to 3 cups all-purpose flour
2 (1/4-oz.) packages quick-rise yeast
1 1/2 tsp. fine sea salt
1 tsp. sugar
1 cup hot water (120 to 130 degrees)
1/4 cup extra virgin olive oil

Kicked-up tomato Caesar dressing
1 oz. anchovy fillets in oil, drained
1/2 cup packed fresh oregano
1/2 cup sun-dried tomatoes in olive oil, drained
1/4 cup dried Parmesan cheese
1 tbsp. minced garlic
2 tsp. fresh Meyer lemon juice
1/3 cup light olive oil

Pizza burger
1 lb. ground beef, preferably 90 percent lean ground sirloin
1/2 cup roughly chopped black olives
1/3 cup diced red bell pepper
2 tbsp. smoked olive oil
1 tbsp. Italian seasoning
1 tsp. extra spicy salt-free seasoning
1 tsp. fine sea salt
4 oz. Camembert cheese, cold (rind removed)
Salt and pepper, to taste

Directions

To make pizza dough: In a large bowl, combine 2 cups flour, yeast, salt and sugar. Using a wooden spoon, stir in hot water and olive oil. Stir in enough remaining flour to form a soft dough. Turn dough onto a floured surface and knead until smooth and elastic, about 5 minutes. Place in a greased bowl and cover with plastic wrap. Let rise for 30 minutes while you make dressing and burger patties. After dough has risen, punch dough down. Cut into 4 equal balls. Cover and let rest for 10 minutes.

To make dressing: In a food processor, add anchovies, oregano, tomatoes, cheese, garlic and lemon juice. Process until finely minced. Scrape into a small bowl and stir in olive oil. Set aside.

To make burgers: In a medium bowl, gently mix together with your hands: ground beef, olives, bell pepper, olive oil and seasonings. Divide into 4 equal portions and shape each into a 5-inch, round patty. Place a 2-oz. slice of cheese in the center of 1 patty, then top with another patty. Press to seal edges. Repeat with remaining patties and cheese. Season both sides of burgers with salt and pepper. Set aside while outdoor grill heats to 400 degrees. Place room-temperature burgers on grill and cook with lid shut for 5 minutes. Turn and cook with lid shut another 5 minutes or until internal temperature reaches 160 degrees. Remove burgers and keep warm.

To complete: Pat each ball of pizza dough into a 5-inch circle. Place on hot grill and cook with lid shut until bottoms are nicely browned. Turn over and spread with enough dressing to cover well. Shut lid and continue cooking until dressing bubbles and dough is cooked. Remove from grill. Place cooked burger on top of one of the pizza circles, then flip the other pizza onto the top of the burger, dressing side down. Repeat and serve immediately.
