Pesto spaghetti squash
Mike Robbins, a firefighter paramedic with the Mountain View Fire Department, describes his colleagues as "good eaters" who are hungry after a hard day's work. This recipe includes ingredients grown in their garden as well as a boost of protein in the form of grilled chicken.
Pesto spaghetti squash

Ingredients

Spaghetti squash
Chicken pieces
Pesto (homemade or purchased)

Directions

Preheat oven to 350 degrees. Bake spaghetti squash whole on a baking sheet for about 45 minutes. Remove seeds and use a fork to pull the "meat" from the squash. Barbecue chicken on a grill or bake in the oven. Cube chicken and toss with pieces of squash. Spread pesto over chicken and squash to serve.
