Lamb burgers

Making a gourmet burger enhances the flavors of naturally delicious lamb. "It is often an underutilized meat, so I enjoy turning it into a familiar food," said dietitian and chef Erin McCarthy, who raised lambs as a 4-H member.
Ingredients
1 egg
1/4 cup chopped mint
1/2 tbsp. honey
1 tsp. rosemary
1/4 tsp. black pepper
1/8 tsp. salt
1 lb. ground lamb
1/2 cup shredded carrot
1/4 cup chopped red onion
1 avocado, sliced
4 lettuce leaves
Directions
Crack egg into a large bowl and whisk with mint, honey, rosemary, pepper and salt. Gently stir in lamb, beet, carrot and onion. Form into patties and cook in a skillet over medium heat, turning once, until patties reach desired doneness. (Ground lamb is best served medium, which is an internal temperature of 160 degrees.) Top with avocado and wrap in lettuce.
