1 1/2 lb. salmon fillet with skin (about 1 1/4 to 1 1/2 inches thick)
1 clove garlic
Salt, to taste
3 tbsp. Dijon mustard
3 tbsp. honey, any flavor
1/2 tsp. cider vinegar
1/2 tsp. caraway seeds, crushed
1/4 tsp. freshly ground pepper
Directions
Preheat broiler and place oven shelf about 8 inches from the heating element. Line the rack of a broiler pan with foil, then coat it lightly with oil. Rinse salmon and pat dry. Place skin-side down on foil-lined rack. Mince and mash garlic with a pinch of salt, then stir together with mustard, honey, vinegar, caraway and pepper. Spread mustard mixture over salmon. Broil just until cooked, about 15 minutes.
