Grandma Vera's rolled cheese tacos

Ingredients
12 (12-inch) corn tortillas
12 (8-inch) strips Monterey Jack cheese or string cheese cut in half lengthwise
4 cups solid shortening
Salt, to taste
Directions
To prepare tacos, roll 1 cheese strip inside each tortilla. Use a toothpick to keep the tortilla rolled tightly. (Tip: Heating the tortillas slightly makes them easier to roll.) Set aside until you are ready to cook them.
Place shortening in a 2-quart pot and heat to 350 degrees. Carefully place rolled tacos into melted shortening and fry about 1 minute, until melted cheese oozes out of the ends. If using string cheese, they are done when the cheese turns a light brown. Use a slotted spoon to remove tacos from shortening. Place on a paper towel to drain and salt lightly before serving.
