Cous cous chicken
Ingredients
1 tbsp. oil
1-2 chicken breasts
½ cup carrots, chopped
Curry powder
Cayenne pepper
1 can (15 oz.) cut baby corn
1 can (15 oz.) straw mushrooms
1 small can (8 oz.) garbanzo beans
1 can (15 oz.) tomato sauce
Water and/or wine
1 cup raisins
Directions
Add oil to pan. Chop and add chicken and carrots. Liberally sprinkle curry powder and cayenne pepper on top. Stir. Add baby corn, mushrooms, and garbanzo beans. You can also add chopped onions or celery. Stir until chicken is cooked mostly through. Add tomato sauce. Fill can half way with water or wine and add. Add raisins. Let simmer. Serve over cous cous.
