Strawberry and cream bars
Ingredients
1 box vanilla cake mix
1/3 cup butter, softened
2 eggs
3 cups strawberries, sliced into 1/4-inch pieces
8 oz. cream cheese
1/3 cup sugar
1 tsp. vanilla
Directions
Preheat oven to 350 degrees. Grease 9x13 baking dish with cooking spray. In a large bowl combine butter, one egg and cake mix. Mixture will be stiff. If necessary, use hands to combine the dough.
Reserve 1 cup of mixture for topping and set aside.
Press the remaining mixture in the bottom of the pan and bake for 10 minutes.
In a mixing bowl beat cream cheese, sugar, vanilla and remaining egg until smooth. Spread cream cheese mixture on partially baked crust. Evenly arrange the sliced strawberries over cream cheese layer. Crumble remaining dough and sprinkle on top.
Bake for 25-30 minutes, or until center is set and crumbs on top are golden brown. Cool completely on wire rack and chill for at least 30 minutes before serving.
Note: Be sure to refrigerate any leftovers.
