Oma's famous butter cookies
Gerry "Oma" Van Ommering used to conclude her dairy tours by giving everyone homemade butter cookies, a rich delicacy from her home country of Holland. The simple recipe showcases the flavor of its star ingredient--butter.

Ingredients

1 1/4 cups butter, at room temperature
1 cup sugar
2 cups flour
Pinch of baking soda

Directions

In a large bowl with an electric mixer, cream together butter and sugar until light and fluffy. Add flour and baking soda, and mix well. Form dough into a 12-inch-long log on a sheet of plastic wrap. Roll up dough in a plastic wrap and refrigerate for several hours or overnight.

Preheat oven to 325 degrees. Cut dough into 1/4-to 1/2-inch-thick slices and place on ungreased baking sheets. Bake for 15 to 20 minutes, or until cookies are golden around the edges. Let cool briefly on baking sheets, then transfer with a metal spatula to racks to cool completely. 

The dough can also be frozen and thawed for later use.
