Lemon ricotta cannoli

Store-bought cannoli shells make it easy to create this gorgeous Italian dessert, which provides balance to the other items on Fabrizio Cercatore’s spring menu.

Lemon ricotta cannoli

Ingredients

1 cup ricotta cheese
1/2 cup powdered sugar
Zest of 1 lemon
1/4 cup mini chocolate chips
8 store-bought or homemade cannoli shells
Powdered sugar for dusting (optional)

Instructions

In a mixing bowl, combine ricotta cheese, powdered sugar, lemon zest and mini chocolate chips. Mix until well combined.

Fill each cannoli shell with ricotta mixture using a piping bag or a spoon. If desired, dip ends of filled cannoli in chopped pistachios or other garnish and dust with powdered sugar.

Arrange on a serving platter for a sweet and refreshing finish to your dinner.

Serves 4
