Sparkling calamansi juice

Chef Roline Casper of Vacaville says this refreshing alternative to lemonade is a great way to try calamondins, also known as calamansi, a small, tart citrus that's commonly used throughout the Philippines and is grown in California.
Ingredients
1 cup honey
1 cup water
1 1/2 cups freshly squeezed calamansi juice
3 cups sparkling water
3 cups ice cubes
Directions
For honey simple syrup: In a small saucepan, combine honey and water and simmer until honey is completely dissolved. Transfer to a separate container and let cool for later use.
To serve: In a pitcher, combine and stir calamansi juice, sparkling water and 1 cup honey simple syrup. Add ice cubes and give it a quick stir. Pour in glasses and enjoy.
