Citrus sage tonic
This refreshing tonic can be served as directed or used as a base for a Paloma cocktail, which traditionally calls for the addition of tequila and a splash of soda.
Citrus sage tonic

Ingredients

3 fresh sage leaves
1 to 2 tbsp. agave nectar, to taste (see note)
2 large grapefruits, juiced (about 2 cups)
1 lime, juiced (about 2 tbsp.)
1 large lemon, juiced (about 1/4 cup)
Sea salt, to taste
Ice cubes, for serving

Directions

Use a muddler or wooden spoon to crush sage into agave nectar at the bottom of a cocktail shaker. Add grapefruit, lime and lemon juices and a few pinches of salt. Shake vigorously, then strain over ice into a glass.

Note: Amount of agave depends on the sweetness of the grapefruits.
