Opa! Opa! This ultra-simple and scrumptious lunch is a healthier version of the typical Greek salad. Enjoy!
Ingredients
1/4 cup arugula
1/4 cup chopped romaine lettuce
1/4 cup diced English cucumber
1/4 cup pitted kalamata olives
1/8 cup julienned red onion
5 baby tomatoes, halved
1/8 cup fresh hummus
Vinaigrette dressing, to taste
1/ 8 cup baked pita chips
1/4 cup feta cheese
1 tsp. fresh basil (sliced in a chiffonade)
Directions
Combine arugula, lettuce, cucumber, olives, onion, tomatoes and hummus and toss with your favorite vinaigrette dressing. Crumble pita chips and feta cheese on top and sprinkle with fresh basil. Serve immediately.
