Devils on horseback

Ann Evans describes this retro appetizer as a companion piece to "angels on horseback," in which oysters or scallops replace the dates. Any variety of date works well.

Devils on horseback

Ingredients

16 dates
16 slivers Parmesan cheese
4 or 5 slices bacon, each cut into thirds

Directions

Preheat oven to 450 degrees. Cut a lengthwise slit in each date, being careful not to cut all the way through, and remove the pit. Tuck a sliver of cheese into each date, then wrap the date with a piece of bacon and fasten it with a toothpick. Place dates on a rimmed baking sheet. Bake dates until bacon is lightly crisped, about 5 minutes. Transfer to paper towels to drain briefly, then arrange on a platter and serve hot or warm.
