Ikeda's nappa cabbage salad
This salad is the perfect showcase for the crisp, delicately flavored nappa cabbage that is a specialty of Ikeda Bros., a fourth-generation family farm on California's Central Coast.

1 large head nappa cabbage, shredded
2 carrots, shredded
1/4 lb. bean sprouts
2 red bell peppers, sliced thin
6 green onions, sliced thin
Shredded cooked chicken breast (optional)
Mandarin oranges (optional)
1/2 cup canola oil
3 tsp. vinegar
2 tsp. sugar
1 tsp. salt
1/2 tsp. ground pepper
Place all salad ingredients except sesame seeds in a large serving bowl. In a separate bowl, whisk together dressing ingredients. Pour dressing over salad and toss well. Sprinkle with sesame seeds and serve.
