Carmel chicken salad Nicoise

1 ea. grilled chicken breast, sliced lengthwise
½ roasted red pepper, broken up in bite-size pieces
¼ cup pitted Niçoise olives (may substitute Kalamata olives)
½ cup haricot verts, blanched (may substitute young green beans)
1 cup mixed greens
1 ea. hard-cooked egg, quartered lengthwise (reserve for garnish)
1 tbsp. toasted sesame oil
2 tbsp. extra-virgin olive oil
1 tbsp. rice vinegar
½ tsp. Dijon mustard
1 tsp. soy sauce
Lightly toss all ingredients together (except the egg), and dress with sesame vinaigrette.
Whisk vinegar and mustard together. Gradually whisk in both oils and then add soy sauce. Season to taste with salt and pepper.
