Kohlrabi and carrot salad

To print this recipe, choose a print size:



4 medium-sized kohlrabi, peeled and shredded (makes 4 cups)
2 medium carrots, shredded
1 Asian pear, shredded
1/2 each yellow pepper and medium red onion, cut into small strips

Andy's Dressing
1/4 cup mayonnaise
1/4 cup olive oil
1 teaspoon toasted sesame oil
1 teaspoon grated fresh ginger
2 teaspoons rice wine vinegar
Juice of 1/2 lime
Salt and pepper to taste


Simply mix all the ingredients for the dressing and set aside. Mix all the vegetables together, add dressing and enjoy.

Serves 4
