1/2 oz. St. George Green Chile Vodka
1 oz. La Favorite Blanc Agricole Rhum
3/4 oz. fresh lemon juice
3/4 oz. cucumber celery syrup (recipe follows)
To make cucumber celery syrup: Using a home juicer, process enough celery for 12 oz. of celery juice and enough cucumbers for 8 oz. of juice. Mix vegetable juices with 20 oz. raw sugar in a heavy saucepan on low heat until sugar is integrated; do not bring to simmer or boil. As soon as sugar is melted, remove from heat and let cool. Store airtight in the refrigerator for up to 2 weeks.
To make cocktail: Shake all ingredients with ice for 6 seconds. Strain onto fresh ice in a double old-fashioned glass. Garnish with 2 bunched mint tips and a cucumber ribbon. For cucumber ribbon, peel a cucumber lengthwise with a Y vegetable peeler. Wrap the peel into a tight coil and spear with a cocktail pick.
