Timaree Hagenburger is a registered dietitian with a master's degree in public health. She also is a nutrition professor at Cosumnes River Community College in Sacramento and a food lover who likes sharing tips and tricks on how to enjoy fresh California fruits and vegetables. This week's segment revolves around a signature Southern ingredient: okra.

Okra is among the very low-calorie vegetables—just 30 calories per serving (about eight pods). It contains no saturated fats or cholesterol and is rich in dietary fiber and vitamins A, B and K. Okra pods are also good sources of many important minerals such as iron, calcium and magnesium.
